Hands down one of the quickest, and easiest salads to make – 20 mins and a handful of ingredients is all it takes for this power-packed, flavorsome bowl of goodness; Low in calories, and light on the stomach, without leaving you craving for more food, and arguably one of my new favorite recipes (although I admit that I say this quite often. What can I say, I love food! :D)
With such a pretty end product, how can anyone resist, but dig in?
There is really no need to talk it up any more, because, as they say, the proof is in the salad! Without further ado, here you go:
If you’re skeptical about roasting the eggplant over the stove, place a small cooling rack over the flame. I must warn you though, that this will increase the time it takes to char the eggplant. If you’re hard pressed for time, or just impatient, go ahead and use an open flame. I promise it’s safe!
