I’ve had countless attempts at being healthy, and pretty much all of them failed. I simply loved greasy, fat foods too much. But a recent bout of food poisoning limited the list of foods I could consume. Despite the difficult first week of abstaining from unhealthy, empty calories, I found myself enjoying organic, all-natural food this time around. What they say is true – the first week is always the hardest!
But, being an impulse eater like I am, it’s not always easy to stick to your diet, especially when you are so hungry, you feel you could eat a horse. At the same time, I found my kitchen pretty void of natural ingredients. It was incredibly tempting to just pick up my phone, and order some greasy, indulgent food. Saying ‘no’ ended up being the biggest blessing ever. Thanks to not giving into temptation, I now have a new favorite, go-to meal. And all it took to make were a few scrap vegetables.
